When I was younger I remember hating coleslaw and wondering why on earth anybody ever ate it, the older I get the more I love it but I don’t like the calorie content in what should be something relatively healthy, after all its only veg and mayonnaise right?

Did you know that one tablespoon of mayonnaise can contain 100 calories?! So how many tablespoons do you end up eating in a side of coleslaw?! 400 – 500 – Those calories add up pretty quickly especially in the creamy variety pre packed ones.

Here below is my simple and super quick to make coleslaw which on slimming world is SYN free but still super tasty, it took me 15 minutes to make and I made it in bulk to have as a side with dishes this week so I am on plan.

Not only is this super healthy it is SO CHEAP to make as well and great for when you are in a rush but still want to fill up your tummy.

1/2 White Cabbage

2 Carrots

2 tablespoons fat free natural yoghurt or fat free greek yogurt

1 Red Onion

Salt & Pepper

OPTIONAL EXTRAS: Lemon Juice, 1 Teaspoon Garlic Granules

Coleslaw
The method could not be more simple.

Peel your carrot and grate into a bowl

Grate or chop cabbage roughly into bowl

Chop onion to the size you like into bowl

Add yogurt and optional extras

Stir together and add a nice dash of salt and pepper

Place in container to keep fresh – mine tends to last me about 5 days if I haven’t eaten it all up.
